Most enemies like to use their powerful spells early in a bout, so save up your best offensive spells. However it's best to use the spells just before your lance hits so the enemy doesn't have time to launch counter spells.
You won't need all 16 spells to complete the game so make sure your knight is well levelled up for the spells You use the most.
