The first big set piece you'll encounter in Outlast 2 is the cornfield. Since it's populated with several hillbillies with machetes, you'll likely be experiencing this farm setting hiding barrels with holes in them and crouching in cornstocks.
How do you get out of it?
The solution is actually rather simple. As soon as you get in the corn field, which feels more like a maze, hug the fence along the right-hand side and follow it along, crouching and making use of your camera's night vision and microphone to avoid bad guys.
Follow this right side long enough, and you'll see a stack of wooden palettes, with one ramped up to it. You'll be off to the side of this, and there will likely be on cultist patrolling very closely. Wait until his back is turned, and make a break for the palette, jump on it, and jump over the fence. They may spot you as you're running, but they won't follow you once you're over the fence, so you're in the clear as long as you can make it to the palette stack.
Keep in mind, this method of getting out of the cornfield will not allow you to grab any batteries or documents that may be hidden around the cornfield's various shacks and structures, but it will be the easiest way to the finish line, so to speak.
