To deface Ramón’s painting in Resident Evil 4 remake and complete The Disgrace of the Salazar Family request, you must hit it with an egg in the Throne Room. Note that this request is only available in Chapter 12. So make sure to do it as soon as you get back from the Mines.
Unfortunately, there’s not much of a hint as to what you need to throw at the painting to “deface” it. Instead, the request itself just clues you in on where to find it:

Even the very sight of his image makes my skin crawl. Do me a service and find some way to deface the portrait of him in the room shown in the photograph, will you?
I’m not particular about how you do it. Hitting it with something might do the trick.
The attached photograph shows the Throne Room. You should remember it from earlier in Resident Evil 4 remake when Leon was thrown into the pit. Head that way and head past the hole and up the stairs to where the throne sits. If you look to your left, you’ll see a portrait of Ramón. However, despite the requestor stating they’re not particular about how you deface the painting, there’s a specific item you have to use.
The only clue as to what the item is lays in the only other inhabitants of the Throne Room: Chickens. There should be an egg you can pick up on the ground. Do so, then equip the egg as a weapon. After that, you can take careful aim and let it fly into the painting. When Ramón has egg on his face, you’ll complete the request. Now, head back to the Merchant to get your reward of 4 Spinels.
